The only DOP cheese of Friuli Venezia Giulia, takes its name from Monte Montasio. Naturally lactose-free, highly prized for its versatility, it can be safely usedinside a cutting board or in the kitchen and combines very easily. In a skilful mix of its seasonings, it is the main ingredient of the Friulian regional dish: frico. After 10 months it returns
in the aging called Montasio dop Vecchio ', little known but very interesting. The structure becomes hard, the grains of tyrosine start to appear making it very pleasant in
mouth. smells and aromas evolve, and in addition to the notes of butter they are felt
notes of dry vegetable, hay, toasted, and in many cases comes out also a fruity note. a light spicy note accompanies the usual sweetness of this cheese.
